This recipe is with firmer filling.</span><br />

Ingredients<br />
Pastry<br />
<ul>
<li>21/4 cups pastry flour</li>
<li>1tbsp brown sugar</li>
<li>1/2 tsp salt</li>
<li>1/2 cup shortening. Very cold and cut in cubes</li>
<li>1/2 cup(115g) butter. Very cold and cut in cubes</li>
<li>about 6 tbsp ice water.</li>
</ul>
Filling<ul>
<li>3/4 lightly packed brown sugar</li>
<li>1/4 cup maple syrup</li>
<li>1/4 cup butter, melted</li>
<li>1large, or 2 small eggs</li>
<li>1tsp vanilla extract</li>
<li>1/4 tsp salt</li>
<li>optional:1/2 cup raisins, pecans, walnuts </li>
</ul>
<div>
To prepare the pastry</div>
<ul>
<li>Mix the flour, sugar and salt together</li>
<li>Cut the butter and shortening into flour mix until the fat is reduced to pea sized pieces.</li>
<li>Sprinkle the water over the mixture 1 tablespoon at a time and toss with a fork until the mixture is sticking together. Lightly work with the dough to form into an inch thick disk. </li>
<li>Wrap in plastic wrap and let it rest in the fridge for 30 minutes.</li>
<li>Roll out on lightly floured surface. Cut into 4 inch rounds and fit into muffin cups. Chill in the fridge while preparing the filling to ensure flaky shell!</li>

To prepare the filling</div>
<ul>
<li>combine all filling ingredients except raisins and mix well. </li>
<li>(Sprinkle raisins in a single layer in the bottom of the pastry lined muffin cups)</li>
<li> Fill 2/3 full with syrup mixture</li>
<li>Bake on bottom shelf of oven at 425 degrees F (or 220 C) for 12 to 15 minutes.</li>
<li>Cool completely on a wire rack and remove tarts from pans</li>

<li>Salt the water as if you were cooking pasta. When the water is boiling, gently drop the dumplings and stir the water at the same time to prevent the dumplings to sink to the bottom of the pot. Stir occasionally especially before the water gets boiled again. </li>
<li>For fresh dumplings, continue to cook about 3-5 minutes after the water boiled up again. For frozen ones, about 7-8 minutes. When the dumplings float up to the surface and the dough become semi-transparent, it's time for the test taste! </li>

<li>Lightly oiled a flat frying pan. Place the dumplings about 3/8 inch apart. Turn on the heat to low and uncovered until the bottom of the dumplings get golden brown. </li>
<li>Fill the pan half way with cold water and cover the pan. Cook about 5 minutes for fresh dumplings or 8 minutes for the frozen ones. When the dumplings absorb all the water and you hear the sizzling sound.Turn off the heat and let the dumplings in the pan for another 3 minutes. </li>
</ul>
Note:<br />
<span style="color: #444444;">After you hear the sizzling sound, check the dough for doneness, especially for the frozen dumplings. If they are not completely cooked, add a bit more water and continue cooking until water gets absorbed again. </span></div>

<li>Boil the broth. Add onion and carrot and cook about 10 minutes or until softened. </li>
<li>Add Chinese fungi, mushroom, and tofu. After the broth boils up, cook for another 3-5 minutes. </li>
<li>Add meat and cook for another 3-5 minutes. </li>
<li>Dissolve the cornstarch in 1/4 cup of water, stir in gently into the soup. </li>
<li>Wait until the broth boils again. Beat the egg lightly and gently stir in the egg. </li>
<li>Season with vinegar, sesame oil, white pepper and green onion. </li>

*You can definitely use the store bought broth can or cube, but nothing compared to homemade broth. Leftover roasted veggies, chicken or beef are the best to recycle and turn them into delicious broth. </div>

*At the workshop I used a full package of dry Chinese fungi that I bought at the supermarket here for the pot of soup for 12 people, and that's a lot of fungi in it. So adjust the quantity according to your taste! </div>

<li>3 cups of all purpose flour (more for adjustment and dusting the surface)</li></ul>

<li>In a large bowl cream together butter and sugar until light and fluffy. </li>
<li>Beat in maple syrup and egg yolk until well combined. </li>
<li>Sift salt and flour over mixture and fold in thoroughly to form a non-sticky dough. Start with 2.5 cups of flour and adjustment the amount until the dough turns into the right texture)</li>
<li>Wrap the dough in plastic wrap and chill for about 1 hour until firm. </li>
</ul>

Preheat oven to 350 degrees F. </div>

<li>Lightly flour the the rolling surface and roll out dough about 1/8 inch think . </li>
<li>Cut out cookies with maple leaf shaped cutter. Gather the scraps and roll out again. When the dough becomes too soft, chill again. </li>
<li>Bake each batch about 12 minutes.</li>

<li>Take about a tablespoon of dough and roll it into a ball then press it down gently or work it into a crescent shape.</li>
<li>Bake 160 C for 15-18 min.</li>
<li>Wait until the cookies cooled (30 minutes will do). Roll them with powder sugar.</li>

轉眼間外派來摩洛哥也快一年. 來前的小目標之一就是學習做摩洛哥料理. 料理嚐了不少, 自己做了也有些心得. 加上朋友們的要求, 就寫在這跟大家分享. </div>

塔吉雞之名是因當地人用有三角圓錐蓋的陶鍋來燉肉而來. 所以家裡有陶鍋及鑄鐵鍋(如圖)都是很好的替代鍋. 個人覺得摩式燉肉跟中式燉肉的差別在於摩式的醬汁收得比較乾, 方便於沾麵包食用. 但如果想要拌飯(泰國香米or印度米都很適合)或搭配北非小米couscous(其實當地人並不將這兩種食物一起搭著吃) 當然醬汁可以留多一點. </div>

做法其實相當簡單. 但如果在亞洲可能兩樣重要食材:香料粉及醃檸檬就不是家裡常備的材料. 在做法之後會再解釋應變方法. </div>

雞腿 8隻<br />
大蒜 5粒切碎<br />
洋蔥中3個切絲<br />
10-15顆綠橄欖<br />
醃檸檬1大顆汁擠出備用後將果肉挖出果皮切絲.<br />
摩洛哥香料粉 (ras el hanout) 兩湯匙 (30ml)*<br />
雞湯or水約1公升<br />
新鮮芫荽及巴西里香菜各一湯匙<br />

`將雞腿洗淨表面劃開以便入味.<br />
`與大蒜, 洋蔥, 檸檬汁, 香料粉攪拌均勻醃至少1小時. 隔夜更佳.<br />
`鍋中火加入油(植物油or橄欖油)將雞肉表面煎至金黃取出.<br />
`轉小火後將醃雞肉汁洋蔥加入以小火炒軟.<br />
`將雞肉放回鍋中加入先加入約兩杯雞湯/水(可以先把水倒進醃雞肉的容器裡把殘留的香料混合出來)大火水滾後轉小火蓋鍋燉約30-45分鐘至雞肉很容易跟骨頭分離. 期間請注意醬汁濃度酌加水.<br />
`將橄欖及檸檬皮加入蓋鍋再燉約10分鐘.<br />
`起鍋撒上香菜.<br />
`完成!<br />

做法真的不複雜.也可以再轉小火後加入紅蘿蔔跟馬鈴薯一起燉. 當地人會搭配節瓜zucchini 或類似胡瓜的瓜一起食用. 但我家小孩們興趣缺缺, 所以我通常搭配如圖的四季豆.<br />

Ras el hanout 是摩洛哥獨特的香料, <br />
幾乎所有肉類的塔吉料理都可以加入. 但如果不再摩洛哥, 與其到貴貴的外國材料店買不太新鮮的Ras el hanout, 不如拿著配方到中藥或香料店自己配. 這跟我在異地自己搭五香粉同.<br />
兩大匙的Ras el hanout 約含以下材料.<br />
<br />
1 1/2 茶匙芫荽籽粉coriander seeds.<br />
3/4 茶匙小茴香粉 cumin seeds.<br />
1/2 茶匙辣椒粉 crushed chilli flakes.<br />
1 1/4 茶匙肉桂粉 ground cinnamon.<br />
1 茶匙紅椒粉 paprika.<br />
1/2 茶匙豆蔻粉ground cardamom.<br />
1/2 茶匙薑黃粉 ground ginger.<br />
1/2 茶匙薑粉ground turmeric.<br />

另外一個材料:醃檸檬, 似乎比較容易取得. 至少在網路上不少鹽漬檸檬的做法. 在這放上我最愛的Carol老師的作法. 基本上只需要鹽跟檸檬, 有興趣的人可以自己做做看!<br />

(note: As the day making the buns to prepare this recipe was in the midst of winter. Last winter I was all about red lipsticks and had spent some time (and $$) to find an ideal red lipstick that goes well with my skin tone (light/medium olive) with good staying power, cause nobody wants to look like Miranda Sings(unless you purposely want to) when wearing a red lipstick!<br />

Speaking of dinner party lipstick, this is the one to go! The color is cooler and brighter than WnW Stoplight red. It's easy and precise to apply, and it dries down to long lasting matte pigment yet comfortable on the lips. It does transfer to whatever your lips touch, but there are still plenty of pigments left after a big meal. It is price above the drugstore lipstick (C$18), but the quality is definitely up there with the high end brands. </div>

Nars lip pencil is a cult classic in the beauty world. However for the price and the design aspects, (need to sharpen and sharpening lipstick is messy!) I've never thought of buying it. I got this jumbo lip pencil in deluxe sample size from this year's Sephora Beauty Insider birthday gift. After the first try, I knew why this lip pencil deserves so many rave reviews.</div>

Cruella is a warm, more muted red with matte finish that would flatter many skin tones. It glides on amazingly smooth. The texture is velvety, light weight but the lips feel hydrated at the same time. It's C$26. I think it's totally worth the price, but would Nars change the packaging to the more convenient twist up tube some day?! </div>

This is also a beautiful color for medium/olive skin tone with semi matte/satin finish. However my lips <u>feel tacky</u> after it dries. The same happens to another Infallible lipstick that I own.<br />

<b>COLOUR RICHE COLLECTION Pure Red Laetitia's Red</b><br />
This gorgeous deep cherry red is probably the darkest red that I would wear. There's nothing wrong with the color and texture of this lipstick, but really hard to find. In fact I've not seen this one in my area since my purchase. I wonder is there a color from L'oreal permanent line similar to this one?!<br />

My son's first costume idea this year was actually mummy. As I teared down an old bed sheet in strips a week before and tried to wrap my son into a mummy, we realized that it's almost impossible to remove it without unwrapping it, which made it a bad choice to wear it to school. Quick change of plan and luckily we were able to seize the very last costume of his second preference in his size. So this year his is a Stormtrooper. </div>

<span style="text-align: left;">So my face painting challenge this Halloween</span><span style="text-align: left;"> </span><span style="text-align: left;">goes to their cousin Z, a crying doll with her mouth stitched. She found</span><a href="https://youtu.be/gWHRpgMaLFA" style="text-align: left;" target="_blank"> a video of a twisted doll makeup.</a><span style="text-align: left;"> I followed the same pattern but switched up the steps a bit. I painted the face from top to bottom (draw the eye brows, line the eyes, draw the tears then draw the stitches) after the base to avoid the chance of touching the areas that are done. Except the $1 white face base, the rest of the makeup is done with products of my own. (BTW, the 8th grader cousin M is her own crazy version of Mad Hatter) </span></div>

I put dark brown eye shadow around the eyes & on the eye brows, a good long wearing black eyeliner (here I used NYX Slide On pencil) to line the eyes. A bit of bronzer all over the face and dark red blush to mimic pirate's tan skin. She is pretty satisfied of her pirate transformation! </div>

In reacting to the recent refugee crisis, my sister asked me if I know any organization that provides the most direct way to help refugees. I always love the idea of using edible items for skin treatment, such as using olive oil to moisturize my hands before and after cooking, cucumber slices to relief and hydrate puffy eyes..etc. Now I'd like share with you my favorite body scrub! <br />

The ingredients are simple: equal parts of used espresso grounds, turbinado sugar, and olive oil (about 2 tablespoons each), all from my pantry! The scent of coffee is absolutely invigorating during the scrubbing action, once rinsed off, there's no coffee scent lingering on skin (maybe on the bathtub). I've seen somewhere recommending using coffee as facial exfoliator, however I would not use it on my rather sensitive facial skin.<br />

The result is smooth, supple skin without the need for moisturizer! If you have used coffee grounds you must try it!<br />

When your skin is in contact with the sun, you need protection. With so many options in the market. I do not settle with the day creams with SPF lower than 30. Keep in mind that the SPF do not add up from all the products that you apply on your face(wearing SPF30 day cream + SPF15 foundation ≠ SPF45, it's still SPF30). If you plan to stay under the sun for long hours, you will have to re-apply the product or opt for creams with higher SPFs. These day creams are simple moisturizer have with little or no fragrance. They do not leave a white film on my skin therefore I'd like to share with you guys!</div>

Although I do not rank these day creams, I have to give the number 1 title to La Roche Posay Hydraphase UV lotion SPF 30. I've lost count of the bottles that I've used all those years. It gets absorb quickly by the skin and give a beautiful glow without greasy feel. It is very moisturizing and gives long-lasting hydration. I wear it all year round except the few super hot weeks in the summer.<br />

I've tried a few drugstore day creams but they all made my skin develop some tiny white <a href="http://en.wikipedia.org/wiki/Milium_(dermatology)" target="_blank">milia</a>, so I rarely try drug store facial moisturizers. However I really like this lotion as it does not irritate my skin and provides good moisturization. It does have the typical suncreen scent and needs a bit time for the skin to absorb but very comfortable to wear, not to mention the price is great! <br />

I picked up this bottle whilst shopping for brightening serum and eye treatments at Kiehls.ca. This moisturizer has a texture that is richer than Lancome Bienfait lotion but lighter than Eucerin lotion. It is truly unscented thus great for sensitive skin. The price is very reasonable and there's larger bottle available (however does not seem to have better value). <br />

Last but not least, I have to mention this ultra light lotion from <a href="http://www.narukocanada.com/" target="_blank">Naruko</a>. This ulta-lightweight lotion is designed for the hot-humid weather like Taiwan has. I use this lotion during the hot summer days as well as traveling in France last summer.<br />
Naruko is a Taiwanese skin care company that claims to use plant base ingredients and offers products at drug store price. I also like to use its Magnolia Brightening and Firming Whitening Lotion & Magnolia Brightening and Firming Whitening Lotion in the summer. I was happy to find out <a href="http://www.narukocanada.com/" target="_blank">Naruko's Canadian website</a>, but most of the products are at least 30% higher compare to the price in Taiwan. I usually refill my stock during my visit in Taiwan.<br />

所謂好吃的鬆餅因人而異, 其實至今我還沒做出我腦裡的夢幻鬆餅(也想不起來從哪得來的口感). 這個使用發粉(有別於比利時列日鬆餅用酵母粉)的鬆餅算是比較接近北美一般餐廳販賣的口感. 鬆軟綿密, 有一點點海綿蛋糕的質感. 我使用液態植物油(而不是奶油)保持鬆餅的濕度. 適合冷凍保藏. 這次在烤時加上哥哥喜歡的巧達起司做成微鹹的鬆餅, 剩下一半麵糊加入藍莓(輕微拌勻即可, 不然鬆餅會變成"黑青"色!)做成妹妹喜歡的藍莓鬆餅. 也可以就個人喜好加糖漿鮮奶油或新鮮水果. </div>

做法其實很簡單, 唯一特別的手續就是將室溫的全蛋打泡至淺黃及兩倍的體積. (如果忘記提早20分鐘拿出來, 可以將蛋液隔熱水約38-40°C打泡, 老實說, 我都是這樣做!)<br />

然後將乾濕的材料分開攪拌均勻後將乾料用篩網篩入濕料. 麵糊會比美式鬆餅(pancake)麵糊稍微稠一點.<br />

將鬆餅機預熱, 也讓麵糊有一點時間醒麵. 順便收拾一下廚房!<br />

This drawing for Earth Day is the one that gave me the most gratification so far. </div>

I made the simple version without frosting for my kids' school snacks. For special friends and family event, I would add more spices (ginger powder, nutmeg, all spices) and extra ingredients (coconut flakes, raisins, walmuts) depends on who I'm serving.<br />

Makes 1 dozen cupcakes<br />

3/4 cup light brown sugar<br />
2/3 cup vegetable oil<br />
2 eggs, beaten<br />
1 1/2 cups all-purpose flour<br />
2 teaspoons baking powder<br />
1 teaspoon baking soda<br />
1 teaspoon ground cinnamon<br />
1/2 teaspoon salt<br />
1 cup finely shredded carrot<br />
1 cup crushed pineapple, drained*<br />
1 teaspoon vanilla extract<br />

Frosting<br />
1/2 cup butter, softened<br />
1 (8 ounce) package cream cheese, softened<br />
2 cups confectioners' sugar<br />
1 teaspoon vanilla extract<br />
1 tablespoon milk<br />
orange zest<br />

Directions<br />
Preheat oven to 375 degrees F (190 degrees C).<br />
Line 12 muffin cups with paper liners.<br />
Stir sugar, vegetable oil, and eggs together in a large mixing bowl until thoroughly combined.<br />
Sift flour, baking powder, baking soda, cinnamon, and salt to the bowl. Stir flour mixture into liquid ingredients until thoroughly moistened.<br />
Mix in carrot, pineapple, and 1 teaspoon vanilla extract.<br />
Pour batter into the prepared muffin cups, filling them to the top.<br />
Bake cupcakes in the preheated oven until a toothpick inserted into the middle of a cupcake comes out clean, about 20 minutes. Set aside to cool completely.<br />
Cream butter with cream cheese with an electric hand mixer in a bowl until smooth.<br />
Beat in confectioners' sugar, vanilla extract, milk, and orange zest until smooth.<br />

Don't forget to take the cream cheese out from the fridge before making the cupcakes!<br />

<li><span style="color: #783f04; font-family: Trebuchet MS, sans-serif;">Add cold water to form a dough. Since I form the dough by hand, I simply wet my hand with cold water a few times to work on the dough until it forms into smooth, non-sticky ball.</span></li>
<li><span style="color: #783f04; font-family: Trebuchet MS, sans-serif;">Wrap the dough in plastic wrap and refrigerate at least 30 minutes.</span></li>
<li><span style="color: #783f04; font-family: Trebuchet MS, sans-serif;">Preheat over to 375 degrees F. </span></li>
<li><span style="color: #783f04; font-family: Trebuchet MS, sans-serif;">Lightly flour the work surface, roll dough out to about an 1/8 inch thick. Cut the dough into 3/4 inch squares. I find it easier to cut the dough from the centre and divide it from there.</span></li>
<li><span style="color: #783f04; font-family: Trebuchet MS, sans-serif;">Place the squares on the baking sheet and bake for 12-15 minutes until golden brown.</span></li>

<li><span style="font-family: "trebuchet ms" , sans-serif;">底部:將底部的3個材料攪拌均勻, 均分放入烤模內壓平後覆蓋保鮮膜放入冰箱備用. </span></li>
<li><span style="font-family: "trebuchet ms" , sans-serif;">乳酪餡: 用電動攪拌器以慢速將奶油乳酪攪拌光滑均勻. 加入乾材料(糖, 鹽, 麵粉)攪拌均勻 依序加入蛋(一次一個),香草精, 檸檬碎皮, 酸奶攪拌均勻即可. </span></li>
<li><span style="font-family: "trebuchet ms" , sans-serif;">烤箱預熱至300 F/ 150 C. </span></li>
<li><span style="font-family: "trebuchet ms" , sans-serif;">將底部從冰箱取出. 將乳酪餡均分至烤模中</span></li>
<li><span style="font-family: "trebuchet ms" , sans-serif;">加入焦糖巧克力. </span></li>
<li><span style="font-family: "trebuchet ms" , sans-serif;">烤約18-22分鐘**至中間還稍呈液狀. 讓蛋糕在烤模裡, 室溫下先冷卻約5分鐘以方便取出放到放涼架上. 待其完全冷卻(約15-20分)後覆蓋保鮮膜(前面用過的不要丟喔!)放置冰箱冷卻至少1小時.</span></li>
<li><span style="font-family: "trebuchet ms" , sans-serif;">將巧克力醬材料融化攪拌均勻後慢慢倒在蛋糕上約8成表面, 用奶油刀塗抹均勻, 在巧克力醬硬化前加入裝飾的巧克力*** 放入冰箱冷卻約30分即可! </span></li>
